Asparagus With Soft Boiled Eggs and Parmesan Cheese

Fresh asparagus and poached eggs are a winning combinations, but it’s not always easy to poach a egg. Soft boiled works just as good.

Ingredients

  • 340 g fresh green asparagus
  • 2 large eggs
  • 50 g (55 ml) butter
  • 1 clove garlic, finely chopped
  • 15 ml lemon juice
  • salt and freshly grounded black pepper
  • 30 g parmesan cheese shavings


Cut of the hard end bits of the asparagus. Bring a pot of water with a little salt to the boil. Add asparagus and let it simmer for about 3 minutes. Drain and place asparagus in cold water. Keep one side. Place eggs in saucepan and cover with cold water. Cover saucepan with lid and once the water boils remove the lid. Boil for 3 minutes. Take eggs out of boiling water and place in cold water to stop the cooking process. Carefully peel eggs and cut in half. Melt butter, garlic and lemon juice together. Place asparagus on serving plates and season with salt and pepper. Sprinkle parmesan shavings on top and drizzle a little butter over. Place eggs on plate and serve with rest of melted butter.

ASPERSIES MET SAG GEKOOKTE EIER-en-PARMASAANKAAS
Aspersies saam met ‘n geposjeerde eier is ‘n wen kombinasie, maar om ‘n eier te posjeer is nie altyd maklik nie. ‘n Sag gekookte eier werk net so lekker en is soveel makliker om te maak.

Bestanddele

  • 340 g vars groen aspersies
  • 2 groot eiers
  • 50 g (55 ml) botter
  • 1 knoffelhuisie, fyngekap
  • 15 ml suurlemoensap
  • sout en varsgemaalde swartpeper
  • 30 g parmasaankaas skaafsels


Sny die harde punte af van die aspersies. Bring ‘n kastrol met water en ‘n klein bietjie sout tot kookpunt. Voeg aspersies by kookwater en laat prut vir 3 minute. Dreineer in vergietes en plaas aspersies in koue water. Hou eenkant. Plaas eiers in kastrol en bedek met koue water. Maak kastrol toe met deksel en bring water tot kookpunt. Haal deksel af en kook vir 3 minute. Haal uit kookwater en dompel onmiddelik in yswater. Dit stop die kook proses. Verwyder versigtig  die dop en halveer. Smelt botter, knoffel en suurlemoensap saam. Rangskik aspersies op opdienbord en geur met sout en peper. Sprinkel parmasaankaas bo-op en sprinkel klein bietjies van die gesmelte botter oor. Rangskik eiers op bord en sit voor saam met res van gesmelte botter.
