Butternut Fritters With Cinnamon Sugar (V)

Butternut fritters or pumpkin fritters is a very traditional South African dish. It was also served as a dessert, but these days it’s a very popular side dish.

Serves about 20 fritters

Barbara’s tip Replace the butternut with diced pumpkin for pumpkin fritters.

Ingredients

  • 2 x 500 g peeled and diced butternut
  • 240 g (430 ml) cake flour
  • 20 ml baking powder
  • 4 ml salt
  • 2 eggs, beaten
  • canola oil to fry fritters

Cinnamon Sugar

Ingredients

  • 100 g (125 ml) sugar
  • 10 ml grounded cinnamon


Cook or steam the butternut till very soft. Drain and let it cool. Place cooled butternut in food processor and blend till smooth. Spoon pureed butternut in mixing bowl. Sieve flour, baking powder and salt together. Add to pureed butternut and mix well. Add beaten egg and mix well. Pour oil about 1 cm deep in non-stick pan. Heat to medium heat and spoon (use a tablespoon) mixture in pan (about 4 at a time). Fry till bubbles appear on side of fritters and carefully using a spatula turn fritters. Fry on other side till golden. Place on kitchen towel to drain excess oil. Cinnamon sugar Mix sugar and cinnamon in bowl and sprinkle over fritters. Keep warm and repeat with rest of mixture.

Botterskorsie of pampoenkoekies is ‘n baie tradisionele Suid Afrikaanse dis. Dit was oorspronlik as ‘n nagereg voorgesit maar deesdae is dit ‘n gewilde bykos.

Genoeg vir sowat 20 koekies

Bestanddele

  • 2 x 500 g botterskorsie, geskil en in blokke gesny
  • 240 g (430 ml) koekmeel
  • 20 ml bakpoeier
  • 4 ml sout
  • 2 eiers, geklits
  • canola olie om koekies in te braai

Kaneelsuiker

Bestanddele

  • 100 g (125 ml) suiker
  • 10 ml fyn kaneel

Kook of stoom botterskorsie tot sag. Dreineer en laat afkoel. Plaas in voedselverwerker en puree tot glad. Skep botterskorsie in mengbak. Sif meel, bakpoeier en sout saam en voeg by botterskorsie. Meng goed en voeg geklitste eier by. Meng goed. Gooi olie sowat 1 cm diep in nie-kleefpan en verhit tot medium hitte. Skep eetlepels vol van botterskorsie in olie (so 4 op ‘n slag) en braai tot borrels aan die kante van die koekies vorm. Draai versigtig om met eierspaan en braai tot goudbruin. Dreineer op kombuispapier. Kaneelsuiker Meng suiker en kaneel saam in bakkie en sprinkel oor koekies. Hou warm eenkant en herhaal proses met res van mengsel.
