Caprese Salad with Croutons (V)

Stunning quick salad for last days of summer.

Serves 4
Preparation time 10 minutes


  • 60 ml olive oil
  • 10 slices French bread
  • 250 g Bocconcini mozzarella balls
  • 350 g exotic tomatoes
  • 15 g basil leaves
  • olive oil to drizzle
  • freshly grounded black pepper

Heat olive oil in a pan. Fry slices of French bread both sides till golden and crisp. Drain on kitchen towel. Break some and the mozzarella in half. Slice tomatoes in half. Arrange croutons, mozzarella, tomatoes and basil on serving plate. Drizzle with a little of olive oil and season with freshly grounded black pepper.

  • 60 ml olyfolie
  • 10 snye Franse brood
  • 250 g Bocconcini mozzarella balletjies
  • 350 g eksotiese tamaties
  • 15 g basiliekruidblare
  • olyfolie om oor te sprinkel
  • varsgemaalde swartpeper

Verhit olyfolie in pan. Braai snye Franse brood weerskante tot goudbruin en bros. Dreineer op kombuis papier. Breek van die mozzarella balletjies in helfte en halveer tamaties. Rangskik croutons, mozzarella, tamaties en basiliekruidblare op opdienbord. Sprinkel met olyfolie en geur met varsgemaalde swartpeper.
