Quick and Easy Scones

Scones don’t have to take a long time to make – this recipe must be one of the easiest.

Cook time 15 – 20 minutes

Barbara’s tip When you brush your scones with the beaten egg, only brush on the top. If you brush the sides of the scones it will prevent it from raising.

Ingredients

  • 480 g (860 ml) self raising flour
  • 1 ml salt
  • 2 large eggs
  • 250 ml milk
  • 50 ml canola oil
  • 1 egg, beaten

Preheat the oven to 180 °C. Line a baking tray with baking paper. Sieve flour and salt in a mixing bowl. Beat eggs, milk and oil together. Make a well in centre of flour. Add egg mixture and mix well till dough forms. Place dough on floured surface and knead slightly. Pat out a round 2 cm thick circle. Use a 5 cm cookie cutter and cut out scones. Place on lined baking tray. Lightly knead the left over dough and cut out more scones. Brush with beaten egg on top and place in oven. Bake for 15 – 20 minutes. Serve warm with jam of your choice.

Barbara se wenk Wanneer jy jou skons bo-op met geklitste eier verf, maak seker dat jy nie die kante van die skons verf nie. As dit gebeur sal jou skons nie mooi rys in die oond nie.

Bestanddele

  • 480 g (860 ml) bruismeel
  • 1 ml sout
  • 2 groot eiers
  • 250 ml melk
  • 50 ml canola-olie
  • 1 eier, geklits

Verhit oond tot 180 °C. Voer ‘n bakplaat uit met bakpapier. Sif meel en sout saam in ‘n mengbak. Klits eiers, melk en olie saam in ‘n mengbakkie. Maak ‘n holte in die middle van die meel en voeg eiermengsel by. Meng deur met ‘n mes tot deeg vorm. Sprinkel meel op werkoppervlak. Plaas deeg bo-op en knie liggies. Druk deeg so 2 cm plat met jou hande. Gebruik ‘n 3 cm koekie-uitdrukker en druk skons uit. Plaas op bakplaat en verf skons bo-op met geklitste eier. Plaas in oond en bak vir 15 – 20 minute.
