Stuffed Mushrooms (V)

Use the biggest brown mushrooms you can get. The filling might look like a lot to you, but you will get all the stuffing in big mushrooms.

Ingredients

  • 4 slices white bread
  • 15 g flat leaf Italian parsley
  • 4 large brown mushrooms
  • 75 g (80 ml) butter
  • 75 g spring onions, chopped
  • 1 clove garlic, finely chopped
  • 2 wheels feta cheese, crumbed
  • 100 g black olives, pitted and chopped
  • freshly grounded black pepper
  • olive
  • fresh basil leaves

Preheat oven to 180 °C. Break bread in big pieces and place with the parsley in food processor. Pulse till finely chopped. Cut out stems of mushrooms and chop the stems finely. Melt butter in saucepan and add spring onions and garlic. Fry till soft remove from heat and add, breadcrumb mixture, feta, olives and season with black pepper. No salt is needed as the butter, feta and olives are salty. Drizzle a little olive oil on baking tray and place mushrooms in tray. Fill with stuffing and place a fresh basil leave on top of each mushroom. Drizzle with little olive oil and place in oven. Bake for 20 minutes. Take out and decorate with fresh basil.

GEVULDE SAMPIOENE (V)
Gebruik die groostste bruin sampioene wat jy kan vind. Die vulsel mag na baie lyk, maar ek hou van baie vulsel in my sampioene.

Bestanddele

  • 4 snye witbrood
  • 15 g platblaar Italiaanse pietersielie
  • 4 groot bruinsampioene
  • 75 g (80 ml) botter
  • 75 g sprietuie, fyngekap
  • 1 knoffelhuisie, fyngekap
  • 2 wiele fetakaas,  gekrummel
  • 100 g swart olywe, ontpit en gekap
  • varsgemaalde swartpeper
  • olyfolie
  • vars basiliekruidblare

Verhit oond tot 180 °C. Plaas brood en pietersielie in voedselverwerker. Kap fyn. Sny stingel gedeelte van sampioene uit en kap fyn. Smelt botter in pan en voeg sprietuie en knoffel by. Braai tot sag. Haal af van hitte en voeg broodkrummels, fetakaas, olywe by. Geur met peper, maar geen sout nie. Die botter, fetakaas en olywe bevat sout. Vul sampioene en plaas ‘n basiliekruidblaar bo-op elke sampioen. Sprinkel klein bietjie olyfolie oor en plaas in oond. Bak vir 20 minute. Garneer met vars basiliekruidblare en sit warm voor.
